What are Ricciarelli Biscuits?
Ricciarelli are chewy, dense Italian almond biscuits from Siena.
They are considered the Italian cousin to the French macaron.
We make the biscuits using ingredients such as ground almonds, almond extract, sugar and egg whites.
Our biscuits have a crackled effect. They look best when dusted with icing sugar.
Ricciarelli are especially popular during the Christmas season but you can also eat them all year round.
Who invented them?
Ricciarelli biscuits were first invented in the fourteenth century in Siena.
Christian knight Ricciardetto Della Gherardesca introduced the biscuits when he returned from the Crusades.
He offered the Ricciarelli to his guests in his castle near Siena.
They immediately became a hit and are now one of the culinary jewels of Sienese culture.
The term ‘ricciarelli’ was not used until the 1880s.
The biscuits were previously known as marzapanetti alla senese or morzelletti.
Ricciarelli is derived from the word ‘rìccio,’ which means hedgehog.
The original biscuits – when coated with an almond – resembled the look of a hedgehog.
