The origins of the Lemon Croissant
The French word Croissant translated means ‘crescent’, in reference to the shape of the pastry.
As with many pastries, historians debate who really invented the croissant.
While crescent-shaped cakes have been around for over 1500 years, most experts claim that Austrian pastry chef August Zang created the modern croissant at his Viennese bakery in Paris in the mid nineteenth century.
Zang adapted the Kipferl, a crescent yeast bread roll originating in Austria centuries earlier. Kipferl is the German word for crescent.
There are also Islamic origin stories for the croissant.
Some historians claim the Kipferl was invented in 732 AD to celebrate the victory of the Franks over the Umayyad Caliphate.. Others say it was invented to celebrate the victory of the Christians over the Ottomans in Vienna in 1683. The shape of the croissant represents the crescent of Islam.
